Stagiates has always been well known for two things: the cool, limpid
water and the delicious sausages produced there.
According to the residents' knowledge of previous history, around
the year 1750, sausage production and commerce were the main activities of the
local population. The sausage producers of Stagiates were unique in Greece for
their expert knowledge in the artistry of sausage production, using only first
quality ingredients and selling their products all over Greece. The writer and
historian Ioannis Kordatos mentions that in the years 1750-1850 Stagiates manufactured
and sold home-made sausages to a great extent. Over the years, and with the development
of technology, this craft has declined and finally became extinct.
This traditional craft is what we wish to revive so as the older generation
can remember and the younger learn about it.
