Our family utilizes the earth, fire, water and air, always with respect for nature. It combines innovation with traditional techniques, passion with logic, to achieve authenticity and purity. We use exclusively grapes of the Savvatiano variety or White Kontoura as it is called in our country, from selected vineyards of Evia and Boeotia.
The distillery has two copper stills, which allow continuous operation 24 hours a day. The spirits are transported for maturation in the area of Aliveri, a few kilometers away from the distillery, where bottling takes place. For the aged tsipouro, spirits with special organoleptic characteristics are selected and they are kept to French and American oak barrels, with a capacity of 225 liters, where they remain for at least 24 months acquiring all these characteristics that make them unique.
