Northwest of Thessaloniki, in mountainous Goumenissa, the Boutari winery started its operation in 1984 and for several years was the only winery in the area. Goumenissa is the center of an area famous for its wines for centuries. Since the early years of Ottoman rule, the people of the area cultivated Xinomavro and Negkoska grape varieties on the slopes of mount Paiko and over the low hills surrounding the small town. The Boutari Estate in Goumenissa is located in the community of Filiria, in the prefecture of Kilkis. Boutari acquired the land in the end of the 80’s, which, in combination with the operation of the local Boutari Winery in 1984, made a decisive role in the development of winemaking in the region. This is the place where Filyria Boutari is made, an exquisite blend of the two most important local varieties, combining Xinomavro and Negkoska, organically grown in the privately owned Boutari vineyard.
